Curry Garbanzo Bean Burgers

Garbanzo beans, also known as chickpeas, provide a source of folate, protein, iron, phosphorous, and dietary fibre! Both dried and canned chickpeas are available all year round for you to enjoy!

These garbanzo bean burgers are simple but delicious! Serve it up on a multigrain bun :)

Ingredients 2 tbs of olive oil 2 cups scallions (chopped) ½ tsp of Caribbean style curry powder ½ tsp of ground coriander ½ tsp of crushed fennel seeds 1 ½ cup of chopped mushrooms 1 ½ cups no salt added canned chickpeas ( drained) 1 medium carrot (shredded) ¼ cup of walnuts 3 tsp of fresh chopped cilantro ½ tsp of salt ½ tsp of black pepper

A small amount of flour for dusting

Arugula, tomato, onions and pickles to top burger (optional)

Let's cook! Heat 1 tbs of oil in a nonstick skillet over medium heat

Add scallions, curry powder, coriander, and fennel seeds and cook for ~2 minutes or until onions start to soften (frequently stirring to prevent burning)

Add mushrooms and stir to mix

Cover the skillet and cook mushrooms for ~4 minutes or until liquids pools in the pan and then uncover the pan and continue to cook mushrooms until the water is evaporated (~ 3 more minutes)

Add chickpeas and mushroom mixture to a food processor and pulse until well chopped. Transfer the chopped mixture to a bowl and add carrots, walnuts, cilantro, salt, and pepper- Mix well

Dust hands with flour and begin to shape the mixture into 4-inch wide patties. Warm the skillet again to medium heat with 1 tbs of oil

Place formed patties into the pan. Heat each side for about ~4 minutes or until brown and then flip and heat the other side for ~4 minutes or until brown, or until the patties are heated through

Top with arugula, tomatoes, pickles and onion (optional)
